Healthy Zucchini Bread
I don’t know about you…
But, my garden is exploding with fresh zucchini. So. Much. Zucchini.
So, I began to look at Zucchini Bread recipes. Again, so many options. So, I took one by @allrecipes and adapted it to something I could eat and feel good about.
Best Zucchini Bread With Sugar Free Chocolate Chips
Pre-heat oven to 325. Butter/oil your loaf pans.
INGREDIENTS:
3 large eggs (room temperature)
2 c white sugar (I used Swerve granulated instead)
1 c vegetable oil
2 c grated zucchini
2 tsp vanilla
3 c Swans Down flour (My grandmother was famous for her mile-hi Angel Food cakes – she used this flour)
1/2 c chopped nuts or chips of choice (I use Lilly sugar free chips)
1 T ground Cinnamon
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
To Make:
Beat 3 whole eggs until frothy.
Add sugar and oil; mix until well combined. Stir in zucchini and vanilla. Combine flour, nuts, cinnamon, salt, baking soda, and baking powder; stir into egg mixture until incorporated. Divide batter into the prepared pans.
Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 60 to 70 minutes.
